there a minimum order?

How
many pounds of crawfish do I need to order for my next party?
As a rule of thumb you want at least 5 pounds of
crawfish for each guest. If you do not intend to serve the traditional
corn, potatoes, sausage, etc., you should consider ordering more.
Can I
only order oysters in months with "R" in the name?
This goes back to the days when refrigeration was not very good. Often,
oysters harvested during summer months would stay, un-refrigerated, on the
decks of the oyster boats for days. This posed a problem with spoilage and
hence the adage about the letter "R" in the name of the month.
With today's government standards and quality refrigeration, you can
safely enjoy Louisiana oysters year round.
Why is
Louisiana seafood different from any other seafood?
Southeastern Louisiana is dominated by two bodies of
water....the Mississippi River and Lake Pontchartrain. Lake Pontchartrain
makes up part of a chain of lakes which drain the area into the Gulf of
Mexico. This sediment rich lake is home to some of the best crabs in the
world. Louisiana Blue Crabs have a sweet taste like no other. The
Mississippi River drains the entire United states and provides a nutrient
rich "ploom" into the Gulf of Mexico. This area is the nursery
for the entire Gulf where fish spawn and spend a great deal of their
lives. Many people believe that those same nutrients which make our
seafood so abundant, also give that seafood its unique flavor.
